Make Banana Pancakes, Pretend Like It's The Weekend Now

I met my second little niece this weekend! Friday, after being subjected to an abysmal salad at a restaurant I don't even like, I drove 3 1/2 hours to a sleepy little town at the hem of the Blue Ridge Mountains. My brother and his family live here in a little tan house with a little white porch. His wife gave birth to their second daughter on Monday. Little Piper has joined her big sister, Ellie, in a family that is so full of love and laughter and I can't wait to see her get old enough to have a personality. For now she is full of cries that sound (appropriately) like a baby seabird's. Once I got my fill of baby snuggles, I got to devote the rest of my time and attention to Ellie (2) who was full of dramatic ideals of running away and/or hiding in her play tunnel come bed time. We opted to make banana pancakes instead. Because when the world is rainy, or it's a Monday, or you've gone from only child to big sister and your daddy sprains his "twinkle" (twisted + ankle = twinkle), stirring up some banana pancakes with your doting and very cool and totally single-and-available aunt is precisely what the doctor orders.

Ellie did mutiny when it came time to actually eat, telling me she wasn't hungry and just wanted "choppit chip cookies," but later in the car she had a different take on the situation:
 "Wachel, guess what? I want your food. To eat your pancakes."
I guess they were a go after all. I'm glad I decided to take my camera last-minute. The quality and backdrop of these photos leaves a lot to be desired, but they were captured in a moment of sweet stillness in the middle of new-baby, pre-vacation chaos. Never let staying on-brand get in the way of your joy in the everyday. Your aesthetic isn't worth your memories. Ellie and I based our recipe for banana pancakes off the one from Once Upon A Chef with the only changes being that I used cane sugar, whole milk, and added some gentle spices. Once you mix up the batter, I recommend topping your pancake stack with sliced almonds and fresh bananas, and maybe even a little drizzle of maple syrup. Or, of course, you could throw in some chocolate chips to appease the inner sugar-dragon of your resident two year old, and drizzle the pancakes with almond butter to anchor the fantasy in a little solid protein. Banana Pancakes
serves four
 1 1/2 cups unbleached all-purpose flour
2 tablespoons raw cane sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 small, overripe banana (riper the better)
1 cup, plus two tablespoons whole milk
2 large eggs
1/2 teaspoon vanilla extract
3 tablespoons butter, melted
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
oil or butter for greasing pan

  1. Mix together dry ingredients in a small bowl and set aside.
  2. Mash your peeled banana and to this add the eggs, vanilla, butter, and milk. Add dry ingredients to wet ingredients and beat quickly till most lumps are gone. It's okay if it's a little lumpy.
  3. Heat your pan over medium heat and grease lightly. Cook one test pancake (feed this to the two year old niece, as it likely won't turn out). Once your test pancake is finished, spoon batter onto the pan and cook till golden brown as you would cook a normal pancake, flipping once. I like to make mine on the small side and serve in a stack.
  4. Top with butter, maple syrup, and slivered almonds or other desired toppings.
