Coconut-Tahini Protein Breakfast Cookies

Protein breakfast cookies...sounds like it could either be a very, very good idea or a very, very bad idea. I mean, when somebody suggests the idea of eating cookies for breakfast I am 100% on board. Sometimes I resist but sometimes I don't even want to resist. Sound familiar? But if you're at all experimental and health-conscious, I'm sure that you've been in my boat: you know, when what you really want is an actual chocolate chip cookie for breakfast and what you've really made is a Kylie Jenner chocolate chip cookie that doesn't even deserve to bear the name. I get it - you try to healthy something up and all of a sudden it tastes like
sadness and broken dreams and you try to pawn the batch off on the rest of your family because there isn't a snowball's chance in hell that you'll ever make it through eighteen of them, even if you freeze half and feed six of the others to the family dog. Been there more times than I'd like and I freely admit it.

Thankfully with these protein-packed, flour-less breakfast cookies, you don't have to sacrifice flavor on the altar of "healthy choices." They are chewy, satisfying, packed with a classic nutty flavor I've come to associate with granola bars, and thoroughly enjoyable. Though they do resemble a soft granola bar as far as texture is concerned, you'll find no oats in these cookies - the texture comes from a whole lotta tahini (or another nut-butter, such as almond butter), unsweetened coconut, an egg, and a few chia seeds to bring it all together. I first came across the bones of this recipe in an instagram post as I scrolled through my feed in that stage of morning grogginess where you're ravenously hungry but too sleepy to do anything about it. The minute I saw tahini breakfast cookies on this account, I got excited. And when I got excited I rushed to make this recipe (changing it somewhat) and 100% forgot which account I first saw the recipe on. I want to give proper credit to the amazing idea of creating a nourishing and delicious "granola cookie" to whomever did come up with the idea and I'll hopefully perform an edit on this post with the place where the real credit should come in. I fiddled with the recipe to fit my tastes and ingredients-on-hand, and though I suggest a few additions that weren't in the original recipe, I'd like to be clear that the clever part of it was someone else's idea - I just embellished. So now, let's have the recipe so you can go on with your bad self and make a batch of cookies which are just perfect for a weekday morning energy punch. I foresee an attempt to keep these cookies stocked in my pantry for mornings when I don't feel like making a "violent omelette" but still want enough protein to keep me satisfied till lunch. Cheers!

Protein Breakfast Cookies (grain free, gluten free, refined-sugar free)
makes about 18 cookiesProt
1 cup tahini (or nut-butter)
1 cup shredded, unsweetened coconut
1 cup dried cranberries
1/2 cup cacao nibs
1/2 cup chopped pecans
1/4 cup sunflower seeds
1/4 cup honey
1 heaping tablespoon chia seeds
1 egg
1/2 teaspoon baking soda
pinch of sea salt
1/4 cups dark chocolate chips for topping off

  1. Heat oven to 350 degrees F.
  2. Mix all ingredients (except chocolate chips) together in a large mixing bowl.
  3. Line baking sheets with parchment paper. Form into ping-pong ball-sized cookies, then flatten slightly with your palm. Top with chocolate chips and (if desired) a scattering of flaky sea salt.
  4. Bake for 12-14 minutes or until beginning to turn golden brown. Cool completely.
